Mexican Fiesta Home Fries


It turns out that more than Idahoans love potatoes! 

I did some research, and it appears that potatoes are America's favorite vegetable. I never really knew that concretely, but from a personal standpoint, I can understand why!

There are so many things you can do with potatoes. 

Crispy Wedges
Twisty fries
Zesty fries
Steak fries
Waffle fries
Potato salad
Potatoes al gratin
Potato soup
Baked potatoes
Boiled potatos

Surely it is true that as stated on grit.com, "Mashed, hashed, baked, flaked, chipped, boiled or fried, we Americans love our spuds."

Furthermore, when you are vegan, gluten free, and seeking to cut back on soy and corn products, they are always a nice, low expense fallback.

Here is a quick, low energy meal that is filling. I kid you not, this plate of food was hard to finish in itself. It's perfect for its quick assembly, goodness, and satisfying nature.

I have to say that it is one of my favorite quick go-to meals. Golden potatoes, latin-flavored black beans and onions, fresh tomato salsa, and lime accented guacamole. Feel free to add anything you want to this dish.

The Guacamole
3 Haas avocados peeled, cut, and pitted
1/2 jalapeño, seeded and chopped small
1 lime, juiced
1/2- 3/4 tsp Celtic sea salt
2 tbsp cilantro, chopped
1 clove of garlic, minced
onion powder, to taste
cayenne pepper (optional)

Directions:
Mash the avocados (smooth or chunky).
Next chop the jalapeños and add to the guacamole.
Add all other ingredients, and mix well.

Fresh Tomato Salsa
3 1/2 tomates, diced
1/2 cup of white onion, chopped finely
1 jalapeno, chopped finely
1/2 cup of fresh cilantro, chopped
1 1/2 to 2 tsp of lemon juice
1-2 garlic cloves, finely chopped (optional)
Celtic sea salt to taste

Directions:
Chop each thing in order, and blend it together with a spoon in a bowl.
Add the lemon juice at the end, and mix well.

Black Beans & Onions
16 oz. can of Bushes black beans, low sodium.
1/3 to a 1/2 of an onion, chopped small
1- 2 cloves of garlic, minced
1/4 tsp cayenne powder
Celtic sea salt, to taste

Directions: 
Place over medium heat, and cook until onions become translucent and beans are fully warmed.

Assemble the plate as seen in the picture. Feel free to add some vegan cheese too.
