Warm Banana Bread Oatmeal

Who ever said that breakfast had to be healthy and boring?

I know some people that in a pursuit of health, sacrifice taste and make eating healthy look like such a chore. But, the good news is, it does not have to be. Neither does it have to be when it comes to oats.

There are so many things you can do with oats.

I love oats.

Oatmeal is one of those dishes that (lets face it), I have never heard of one person gaining weight on. In fact, many people loose weight regularly consuming oatmeal.

...If that is not a reason to love it!

The truth is though, you don't have to stick to your "usual oatmeal" routine in efforts to enjoy that wonderful waist trimming effect of oatmeal. You can switch it up and literally add some spice.

I got an inspiration to do this and that is why the last two posts have been on oatmeal. If you haven't seen the recipe for the baked apple pie oatmeal, go check that out!

Here is a nice recipe for a delicious warm vegan banana bread oatmeal.

Be prepared to get on your banana bread bent! --- and for this one, your bananas do not even have to have the speckles...even though the more speckles the sweeter :)

This recipe can feed 4-6.


3 cups of rice or soy milk
3-5 tbsp agave nectar (this part is really according to your taste)
1/2 to 3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp pure vanilla extract
2 cups of old fashioned gluten free oats
2 tsp milled flax
1-1/2 to 2 ripe bananas, mashed
Walnut pieces or pecans pieces (desired amount)


In a medium sauce pan bring the rice or soymilk to a light boil.

Add in the agave, cinnamon, vanilla extract, and nutmeg. Stir in well.

Next, add in the gluten free oats.

Cook until the oats expand and absorb most of the liquid (if you like it that way, of course). This will only take a few minutes at most.

Once the oats are well cooked, remove from heat, and stir in your mashed banana, milled flax, and walnut or pecan pieces.

Serve warm.
